Lemon and Garlic Roasted Vegetables

INGREDIENTS:
1kg potatoes, peeled and chopped
2 carrots, thickly sliced
2 cloves garlic, crushed
1 tbsp lemon rind, finely grated
1 red capsicum, chopped
2 zucchinis, thickly sliced
2 tbspn olive oil
Salt & pepper
METHOD:
1. Place potatoes, carrots, garlic, lemon rind and oil in a baking dish and toss well.
2. Season with salt and pepper and cook in a hot oven (200C) for about 40 minutes
3. Add capsicum and zucchini and cook for a further 20min or until vegetables are almost tender
